'Explicit' means 'straightforward/clear': we gave him explicit instructions; she was quite explicit (she spoke very plainly). Therefore, I'm afraid you can't use the term to describe a style of cooking.

Many thanks to Conchita that she explained to us the "explicit". I really sorry that she left this course.
Exquisit= (as a new word for me, I would like to write what I had looked up.
Exquisit(adj)=
1. Extremly beautiful or carefully made: exquisite craftsmanship
2.(of a feeling) strongly felt ; syn:acute: exquisite pain/pleasure
3.(formal) delicate and sensitive: The room was decorated in exquisie taste./ an exquisite sense of timing

I think its synonyms in this text can be: excellent first class, top quality
