They are both appropriate for people and for things.
Have you tried looking their meanings up in a dictionary?

The expression is used for referring to many different events in a way that is not specific. You use this expression in order to explain why something did or did not happen
What with one thing and another, I didn’t get home until after midnight. (A number of unrelated things happened which stopped you getting home earlier.)
What with one thing and another, we spent a lot on maintenance. (A number of unrelated things went wrong with the building which meant you had to spend a lot of money on it.)

what with one thing and another = because of some problems.

I can't simplify it more without changing the meaning.

Hi Kanta,

In your sentence 'one thing and another' simply means 'other things'. It is similar to etc, which people use when they don't give details of these other things.
