I think ' many' is used for countable nouns in question and negative sentences.
'a lot of ' is used for both countable and uncountable nouns in all kinds of sentences.

am I right ?

Hi there. Something has caught my attention here.

We don't need much milk for this recipe.

As far as I know, when it comes to 'milk' which is an Uncountable Noun, we need to use MUCH.

It is the same if you say "I don't have much money". Here, the usage of MUCH is correct as it talks about MONEY which is an Uncountable Noun.

You are correct about the use of 'much' with milk and money, but you can also use 'a lot of milk' and 'a lot of money'..
