Would you say:

"I am one POINT sixty-five metres"?

How would you say?

To be honest, I'm not sure what I'd say in meters and centimeters because I've only ever spoken in English about my height in terms of feet and inches. Embarassed

By the way, the "short way" to say your height in feet and inches would be:
