What part of a fish are you referring to?
Are you referring to the skeleton of a fish? If so, I call those things bones. Wink

As I see it, quills and spikes would usually be visible on the outer body of something.
On the outer body, fish also have fins, for example.

In fact, I want to know about those pointed ( thorn like) things in a fish because of which we find it difficult to eat fish.

Is it simply bones? Please see:

Oh, I cannot eat this fish; there are a lot of bones in it.
