This is a large topic, Andrew. Here is one point--

When used as a verb complement/object, the forms are idiomatically associated with different main verbs, and there should be a list in your grammar book. For example:

like to do and like doing have about the same meaning.
enjoy doing-- enjoy does not use the infinitive form.
want to do-- want does not use the -ing form.
remember doing and remember to do have different meanings.
