Hi,
How about putting it this way: Potatoes are vegetable (Solanum tuberosum) and cherries fruit. |

Hi,
It really depends whether you are talking about these things as separate entities (vegetables/fruits) or whether you are giving them a label, a definition( vegetable/fruit).
Likewise: cats are animals/cats are animal (not mineral or vegetable).

I'd use one of the following three:
A potato is a type of vegetable and a cherry is a type of fruit.
Potatoes are vegetables and cherries are fruits.
