Findings means what has been found and it is used here as a noun. Seeking is part of the verb seek and is the present participle/gerund.

Probing is the gerund form of the verb to probe which means to investigate or to examine.

As for your sentence, the correct version is:

You must remember to the bill.

This means you haven't paid the bill yet so you shouldn't forget to do it.

I remember paying the bill.

This means I have paid the bill already and I still remember that I did it.
