Hello ,

In the sentence:
- I love looking at photos. I like ...... of all the happy times.

Issues
- being reminded Is the correct one but why?
- why "remembering" does not fit here?

'Remembering' doesn't fit in that sentence because of the preposition 'of. We can remember something, not 'of something'.
