Could I say New York is palying with Boston?
Or New York vs. Boston.
New York is competing with Boston.

Which one is true English.

what about on tonight's television instead of on television tonight?

New York is competing with Boston. Well, it wouldn't be grammatically wrong to say that, but it also wouldn't be the most typical thing to say.

You could also say something like this:
Tonight, the (New York) Yankees take on the (Boston) Red Sox.

instead of on television tonight? Yes, that's fine.
