. It's an adjective used as a noun:
The rich get rich and the poor get poorer. 'The Good, the Bad and the Ugly' is one of the best Westerns ever made.
Her beautiful today surprises me.-- I suppose that this is OK, but it seems quite awkward to me. In any case, it obviously refers to the fact that she is beautiful for today only.

Hi Nessie
Mister Micawber has already said that he finds the usage quite awkward. I agree.
