Usage of commas in a series of independent sentences

I am aware that joining two independent sentences together with only a comma creates a comma split; however, is it possible to use only commas to separate independent sentences in a series? If so, what rules have to be followed?

I had a very enjoyable evening. The meal was delicious, the service could not have been better and the company was excellent.

Instead of a full stop after evening, should it be a colon?
Would it make any difference if the sentence read: The meal was delicious, the service was good, and the company was excellent.
