Hello Shali,
There is no meaning for the other options. This question tests the students' abilities to identify the common expression which means "reminding someone to "watch his p's and q's" means to pay attention to the details."

It's also possible that the word 'would' is missing:
"The employee knew he would have to mind ..."

Hi Shah,

Back to your question: What do all the other options mean? would be a better way of asking. In the test you are asked to choose which letter would follow 'p'. You have had the meaning
