what is the difference between "all" and "everything" in sentence "All i was trying to say was.

All in this sentence simply indicates the sense of only as in I was only trying to say. Everything indicates all the things.

All can used with both plural as well as singular nouns:
All the people in the world.
All the money in the world.

How should we guess this is not finished sentence if punctuation was not completed?

"......... I was trying to say was." insteed "......... I was trying to say was...."

Hi,

Note the spelling: instead of. In both sentences you could use 'what' to fill the gap.
