I believe that,
the correct way to say things above is

I should've gone there.
I should've known that.
I should've rung you.

as it should be 'should(could, would etc.) have + past participle'.

But why is that some people say

I should've went there.
I should've knew that.
I should've rang you.

like this?
So, is this grammatically wrong but used anyway?

Just wondered.
Actually remember hearing it when I was Ireland and Northern Ireland.
Or in some English films.
Wonder if it is used, said a lot in the other part of the world.
Cheers.

Yes, it's grammatically wrong, but still used by some natives. You could say it's a bad habit, which some even call uneducated speech or dialect.

I don't think I've heard this form in the London area, for example, and wouldn't know about Ireland, but it seems to be used by some AmE speakers.

.
I've heard people use constructions such as "should've went" on both sides of the Atlantic. It is a very informal usage and tends to be stigmatized -- i.e. other people might simply think you sound uneducated. It is not appropriate in standard or formal English.
