should you respond with

"me too" or "you too"

"Me too" and "you too" are both wrong.

You can say:
"Nice to meet you too."
"Same here."
"It's a pleasure to meet you too."
"Happy to make your acquaintance."

There are a lot of other expressions that also fit in that situation.
