I have a doctor who says, He bereth close watching. Has anyone heard this before, or know the correct spelling? Maybe I'm hearing it wrong.

The expression is "He bears close watching."

It means somebody should pay extra attention to something.

Presumably, since a doctor is saying this, he's concerned about the health status of a patient, and is saying the patient should be watched very carefully.

Yes, either you misheard your Doctor, or he is a very old person, or he thinks he can speak English. ( Only joking. )
