There are a lot of adjectives you could further modify with 'absolutely'. It's just an intensifier, and would make sense with many adjectives.

A few off the top of my head are insane, crazy, pointless, brilliant, foolproof, miserable, and giddy, but there are more.

It's not going to work with some of the basic descriptive adjectives such as tall, long, old, blue, white, fast, etc. There's not a rule that I can tell you to apply, you'll just have to try some and ask if they make sense.
