All 3 are acceptable.

I'd comment that although '3 persons' is correct, the usage of 'persons' seems to be falling out of use. I think it's used more nowadays in formal or legal documents.

'3 men' would of course be limited to situations where you actually knew the gender of the 3 in question, where 'people' isn't gender specific.
