It looks terribly wrong to me.

"I remember reading a quote from a philosopher which said that she deduced time wouldn't exist at all if we hadn't seen any changes in the world."

That said, the last part is worded oddly. You might want to say "She deduced that, if we didn't see changes in the world, time wouldn't exist at all".

"I remember reading a quote from a philosopher which said that she deduced that, if we didn't see changes in the world, time wouldn't exist at all.''

On second thought, go ahead and use "I remember reading a quote from a philosopher that said she had deduced that, if we didn't see changes in the world, time wouldn't exist at all.''.

The difference between "that" and "which" is very subtle; but it's something some people are picky about. I should've been more through the first time around.
