If I were you, I would say "I go to school in my parent's car". I do think your sentence is quite strange.

You can say "My parents drive me to school."

That also sounds a little odd as both parents wouldn't be doing the driving at the same time.

You are not talking about a specific day. If that is the case, you can say "My father drove me to school today" or "My mother drove me to school today." You are talking about a general situation. That means sometimes your father drives you and sometimes you mother does. It is not idiomatic to do the direct translation by saying "I go to school in my parent's car." How can you "go" in the "car"? It sounds natural to say:

"How do you go to school?"
"My parents drive me."

It is perfectly acceptable to say I go to school by car.

Yes, it is perfectly alright to say "I go to school by car." If you use this structure to do the translation of 乘坐父母的车去上学, it will be "I go to school by my parents' car," which emphasizes "whose car" you ride to go to school, whereas "whose car" in Chinese is not important while what's important is how you go to school--not walking, but riding!
