I don't really understand why we can write take +ing after will?

You can do that, it's only that there is a missing word, the sentence should sound as follows in proper english:

You will probably be taking over my tutorial groups.

Yuppie is correct, but here's another answer.
You also could say, "You will probably take over my tutorial groups." or "Probably, you will take over my tutorial groups."
