By now we can probably all agree that the iPhone is the Model T, the Sputnik, the Lawrence Taylor of the mobile technology realm. We are still waiting for the offenses to adapt, the competition to catch up.
What is meant by ‘waiting for the offenses to adapt‘,and to whom or what do ’the offenses‘ refer,please?

They're saying that they are waiting for Apple's competition to adapt to the new market.

"Offenses" is a really weird word to use in this context. I guess it's an analogy to the offensive players on an American football team.
