.
Turn A into B = convert, change, recast A to B.

Here, the speaker wants to clarify the word 'waiting' by stating that it means 'being a waiter in a hotel'.

Hi,

The reason I chose turn into in this story is that I meant convert or change it into an explanation because on its own it can mean being a waiter in a restaurant, which is the sense I have used it in the story and also of course it can mean expecting something to happen as in waiting for a bus.
