Some corrections:
Every morning we would go swimming at the beach.
In the evening we would go to the center of Skiathos / central Skiathos.
You wouldn't use "used to" because it represents a repeated action in the past. As you're writing about a single event that lasted only ten days, the simple past is better. However, the modal "would" (see my examples above) also works here. |

As a modal, "would" can be used the same as "used to." When referring to something you did repeatedly in the past, these two modals convey that meaning.
Generally, for something you did only once in the past, the simple past tense works. |
