Bovine would be in reference to cattle, however it is not immediately obvious what bovine characteristic(s) are being embodied by the yokel. Typically referring to someone as bovine would imply an above average girth, but in reference to a yokel (hillbilly, bumpkin, etc.) I am more inclined to think it might have something to do with cud chewing and a vacant stare.
