Does this sentence sound right to you? Wouldn't you say "In 2007, the most famous Texas chupacabra -- a strange, nearly hairless creature -- was discovered near a ranch outside the town of Cuero"?

The sentence is fine. Adverbs of time can appear in several places in a sentence.
