Hi,
The verb “sail” means to move across the surface of water, especially by means of a sailing vessel. The expression is “to go sailing”, just like “to go walking”, “to go fishing”, etc.

'Going sailing' is the term used for participating in the activity or sport of steering/maneuvering boats with sails.
The plan was to take a sailing boat or yacht out to sea (or take a journey on a large sailing ship).

These boats have sails. The people on them are sailing.
