You have just given some sentences which are OK and are not OK.
But never said, how to distinguish ones from other.

OK, now you say "We had much snow." is wrong. I understood because of Alan said why.
But how about others, like "Much meat, much malady." or "Much money makes a country poor, for it sets a dearer price on everything."
There are lots more that "much + noun(uncountable)" is used in a positive sentences.

I explained to you in post #2 that 'I couldn't explain why.'

Other than the general guideline already given. I think it may just have to be done by growing familiarity.
