Famous means well known. Everybody knows Venice - that's why it is famous - well known.

Famous for has the sense of well known for and for in this sense means because of/on account of.

Alan has already explained it. The sentence "Venice is famous for its canals" means "So many people around the world know Venice because of its canals." Again, "famous for" means "because of".
