Cristina - yes. It is talking about a specific 'man' who used his hands and feet and so was better able to survive and pass on DNA, rather than man in general.
The clue is with the commas. Your sentence would be - According to the theory of natural selection, man, who was able to use his hands and feet most freely to walk and grasp, was the one who survived and evolved.

See the difference? (but anyway, logically it is talking about the man, rather that man as a species).

I thought the theory told about man as a species, rather than man as a separate individual.

And yes, I would have preceded and followed the word 'man' with commas (I was not so sure about the one after 'grasp'), but, as I usually don't fuss too much about punctuation (although I do realize its importance), I wrote nothing about those.
