What subject matter to you wish to learn about? Do you mean one of these:

I want to learn about the part of a sentence called the 'subject'.
I want to know about the word 'matter'.
I want to know about the phrase 'subject matter'.

Or do you mean something more general like, "I want to learn about English"?
