The idea of eating horseflesh is more acceptable in some countries than in others, but leaving that aside, as a horse is a large animal, for a human to eat an entire one would be a great feat indeed!

This saying indicates that the speaker is extremely hungry. It isn't an indication of how acceptable they find the idea of eating horseflesh.
