What did Mark say about working on Saturday?
He said he won't be available. - 'won't be available' still lasts so there is no need to change it to :'wouldn't be available', right?
-or shouldn't it be: He said he would't be available.?

I think the both sentences are acceptable, ok? (both sentences or the both sentences?)
