plese explain: our new mocha freeze is really taking off = our new freeze for mocha (a kind of coffee) is solding out very well?
is 'freeze' a noun or an adjective in this text?

the noun here is 'freeze' (a flavoured ice-slush drink). Mocha is the adjective.

Our new coffee flavoured ice drink is selling well.

No, crushed ice, not cubed ice.
It describes the flavour of the 'freeze':
mocha freeze
strawberry freeze
apple freeze
mint freeze
lemon and mango freeze, etc.
