Hi Jesus
First I'd like to comment on "well-used" (because I've noticed that you often use this word in your questions, but it isn't used well ;))
It would be better to say "Is it used correctly here?" or "Is 'in a mess' used correctly here?"
Now my answers: :D
1. Yes, you can say "I left the dining room in a mess..."
2. No, you cannot omit 'THE'. The word 'the' is necessary here.

Yes, of course!
You can use 'mess' several different ways: "The dining room is a mess." "I left the dining room a mess." - or maybe even - "I left the dining room messy."
