1. Do not go out in the sun with your head uncovered.
2.Do not go out in the sun with your head open.
Could we use 'open' and 'uncovered' interchangeably?

Not in this byspel.

1. Do not go out in the sun with your head uncovered. <--- This is good.
2. Do not go out in the sun with your head open. <--- This would mean that the head is literally opened up, as in cut open. You could say "bared" or "with a bare head", "unbewried", "unprotected", "without a hat", asf.
