e.g.Let's go to eat pizza( or should it be: Let's go and eat pizza.)

Both are possible. In most circumstances the version with "and" is more colloquial (though something like "Let's go and get some pizza" would actually be more usual). The version with "to" can have a stronger sense of "in order to", i.e. explaining the reason for going somewhere.
