I would prefer "taking time to evaluate". The sentence is also a little "stringy" (a term I learned here :) ). So, I would split it into two sentences after "request".

Just use a full stop and 'I' instead of the word 'and':

I truly appreciate your help and taking time to evaluate my request. I wish you every success with your studies and the best of luck in your life.
