I would replace the word "challenges" with the word "risks".
"Take risks" would be a normal collocation or "word partnership".
If you really want to use the word "challenges, then I would possibly say "take on challenges"
1. A person willing to take risks could be called a "risk taker" 2. A person unwilling to take risks might be called a "wimp" (That's an informal word. Did you want something more formal?)
I think the words you're looking for depend a bit on the context. Did you have a specific context in mind?
