Are the following sentences correct , is there a difference if I use after since the past simple or the past perfect?

I hadn't seen him since I last talked to him.
I hadn't seen him since I had last talked to him.

"I haven't seen him since I last talked to him." is correct.
"I hadn't seen him since I had last talked to him." can be correct in a context.

In my opinion there is no need for using "last" in the sentences.

But what about ' I hadn't seen him since I talked to him'?Is it correct to use after since past simple?

No. For the "deep" past, chronologically, doesn't come (happen) after the simple past.

"I hadn't seen him since before I talked to him.", would work grammatically.

since ~ "from" some time in the past till now
before ~ the first event has happened. Then the second event has happened
