Could you please tell me whether it is grammatically correct to say "Monday's night" or "Monday night"???

Monday night is correct.

Is there a specific reason why you asked about "Monday's night" ? (i.e., Have you seen it in a specific sentence and/or are you looking for an exception to the rule?)
