I've two questions for you.
1 - If I want to ask someone about Italian food is " how is Italian food?" correct?
2- Do I have to say the Italian food or simply Italian food ?

1. "How is Italian food?" is not a very likely thing to ask. You may perhaps mean "What's Italian food like?". To be sure, one would need to know more specifically what you mean by "ask about".

2. If you are talking about Italian food in general then you do not need the article.
