It is correct as it appears in the question. To use the word 'or' indicates that the person is one or the other. In fact, he is (or rather he isn't!) both. He is not bored. He is not uninterested. In addition, if you use 'or' in the first part, you should use 'or' in the second part.
Your corrected post would be: Hi, Shouldn't this sentence be, "I am not bored OR uninterested. I am excited and interested."? Please explain why it's not like that if am wrong and also correct my post if there are any grammatical mistakes. Thanks a lot in advance. _________________ "Inside every old person is a young person wondering what happened."

Hi Mouhannad,
If you really wanted to 'refresh' the sentence in the test and give the contrast between alternatives (neither/nor), you would say:
I am neither bored nor interested. I am both excited and interested.
